Kachi Ghani Mustard Oil: Why the Oil in Your Achaar Matters

The Secret Ingredient in a Great Achaar Isn't a Spice — It's the Oil

Ask anyone who makes pickle the traditional way and they'll tell you the same thing: the oil decides everything. It carries the spices, protects the vegetables, and deepens the flavour over weeks of quiet maturing. Get the oil wrong, and no amount of masala can save the jar. Get it right — with real kachi ghani mustard oil — and you have an achaar that tastes the way your grandmother's did.

At Rajasthan Healthy Food, that's exactly the oil we use. Here's why it matters, and why we'll never swap it for cheap alternatives.

“In a pickle, the oil isn't a base — it's the soul.”

What Is Kachi Ghani Mustard Oil?

“Kachi Ghani” means the mustard seeds are cold-pressed at low temperature, the traditional ghani way — without heat or chemical extraction. This gentle pressing keeps the oil's natural pungency, aroma and goodness intact. That sharp bite you smell when you open a jar of real achaar? That's kachi ghani mustard oil doing its job.

Why Mustard Oil Is Perfect for Pickles

Mustard oil isn't just about flavour — tradition chose it for good reason:

  • It's a natural preservative. Its potency helps protect the pickle the old-fashioned way, so there's no need for chemical preservatives.

  • It carries spice beautifully. Mustard, fenugreek, chilli and haldi bloom in it, giving that deep, layered achaar taste.

  • It matures the pickle. Over days in the sun, the oil softens the vegetables and marries every flavour into one.

  • It's authentically Rajasthani. This is the oil our kitchens have trusted for generations.

Why We Say No to Palm Oil and Preservatives

Most mass-market pickles today are made to survive months on a shelf and a long supply chain — so they lean on cheap palm oil, synthetic preservatives and artificial colours. It's cheaper and faster. It's also not real achaar.

We took the harder road. Across our range you'll find no palm oil, no preservatives and no artificial colours — just kachi ghani mustard oil, salt, sun and whole spices. (Our Lemon Pickle and Amla Murabba are traditional oil-free preparations, made sweet-and-sour the classic way.)

How to Spot a Genuinely Pure Pickle

Next time you shop for achaar, turn the jar around and check:

  • The oil: it should say kachi ghani / cold-pressed mustard oil — not “edible vegetable oil” or palm oil.

  • The preservatives: look for 0% preservatives, not a list of E-numbers.

  • The colour: real depth comes from red chilli and turmeric, not added colour.

  • The certification: a clear FSSAI licence (ours is 12224038000012) and a veg mark.
