Ingredients

–  2 leaves romaine lettuce

–  7 cherry tomatoes

–  ¼ medium red pepper

–  1 medium cucumber

–  2 0z canned white beans

–  2 tbsp olives

–  1 tbsp white vinegar

–  1 tbsp olive oil

–  1 tbsp dijon mustard

–  Salt and Black Pepper

Instructions:

1. Begin by rinsing and draining the canned white beans.

2. Chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.

3. Cut the cherry tomatoes in halves and dice the red pepper and cucumber. Add them to the bowl.

4. Mix in the white beans and olives.

5. In a small bowl, whisk together the white vinegar, olive oil, dijon mustard, salt, and black pepper. Pour the dressing over the salad and toss to combine.
