Ingredients

–  ¼ red bell pepper

–  ⅓ cup lentils

–  ½ cup vegetable broth

–  ½ cup water

–  ¼ tbsp turmeric

–  ¼ tbsp cumin

–  Salt and Pepper

–  1 bay leaf

–  ½ tbsp parsley

Instructions:

1. In a pot, combine the lentils, vegetable broth, water, turmeric, cumin, salt, pepper, bay leaf, and red bell pepper.

2. Bring the mixture to a gentle boil, then reduce the heat and let it simmer until the lentils are tender (approximately 20-25 minutes).

3. Once the lentils are cooked, remove the bay leaf and stir in the parsley.

4. Serve the vegetables and lentil mixture hot, garnished with additional parsley if desired.
