Vegetable Stir Fry Recipe

Ingredients
– ¼ medium red bell pepper
– 1 tbsp olive oil
– ½ medium carrot
– ½ medium white zucchini
– 3 0z broccoli
– 2 tbsp water
– 1 scallion
– 1 egg
– 2 egg whites
– Salt and Black Pepper
– ¼ cup green peas cooked
Instructions:
1. Heat a large skillet over medium heat and add olive oil.
2. Once the oil is hot, add in the chopped red bell pepper, carrot, white zucchini, and broccoli. Stir fry for 2-3 minutes until the vegetables start to soften.

3. Add in 2 tbsp of water to help steam the vegetables. Cover and cook for an additional 2-3 minutes.
4. In a small bowl, whisk together the egg, egg whites, salt, and black pepper.
5. Push the vegetables to one side of the skillet and pour the egg mixture into the other side. Scramble the eggs until cooked through.
6. Mix the eggs with the vegetables and add in the cooked green peas.

7. Stir everything together and cook for another minute.
8. Garnish with chopped scallions and serve hot.
