Ingredients

–  1 0z chickpeas

–  2 tbsp onion

–  2 tbsp cucumber

–  1 tbsp green olives

–  4 cherry tomatoes

–  Salt and Black Pepper

–  1 tbsp white vinegar

–  1 tbsp extra virgin olive oil

–  1 whole wheat tortilla

–  2 romaine lettuce

Instructions:

1. Start by draining and rinsing the chickpeas. Then, in a mixing bowl, combine the chickpeas with diced onion, cucumber, chopped green olives, and halved cherry tomatoes.

2. Season the mixture with salt and black pepper to taste. Add in white vinegar and extra virgin olive oil, and mix well to combine all the ingredients.

3. Lay out a whole wheat tortilla on a clean surface. Place two romaine lettuce leaves in the center of the tortilla.

4. Spoon the chickpea salad mixture on top of the lettuce leaves, spreading it evenly.

5. Roll up the tortilla tightly, folding in the sides as you go, to create a wrap.

6. Cut the wrap in half and serve immediately.
