Ingredients

–  ¼ medium Avocado

–  1 tbsp lemon juice

–  1 hard boiled egg

–  1 whole wheat tortilla

–  ¼ medium green bell pepper

–  ¼ cup white beans

–  2 Romaine lettuce

–  Salt and Black pepper

Instructions:

1. In a small bowl, mash the avocado with lemon juice. Spread the mixture onto the whole wheat tortilla.

2. Peel and slice the hard boiled egg and place it on top of the avocado mixture.

3. Thinly slice the green bell pepper and sprinkle over the egg.

4. Drain and rinse the white beans, then add them on top of the bell pepper.

5. Top with shredded Romaine lettuce and season with salt and black pepper.

6. Roll up the tortilla and enjoy!
