Ingredients
– 1 tbsp olive oil
– 1 garlic
– ½ medium carrot
– ¼ medium yellow onion
– ¼ medium red pepper
– ½ cup chickpeas, boiled
– ¼ tbsp turmeric
– 1 tbsp nutritional yeast
– A pinch of chilli powder
– Salt and Black pepper
– 2 0z Spinach
Instructions:
1. Heat olive oil in a pan over medium heat and add minced garlic, diced carrot, diced onion, and diced red pepper. Cook until vegetables are tender.

2. Add boiled chickpeas to the pan and mix well with the vegetables.
3. Sprinkle turmeric, nutritional yeast, chilli powder, salt, and black pepper over the mixture and stir to combine.

4. Finally, add spinach to the pan and cook until wilted.
5. Serve hot and enjoy your nutritious Chickpea and Vegetable Stir-Fry!
