Zucchini Bread

Ingredients
– 2 Eggs
– ¼ cup melted coconut oil
– 4 tbsp honey
– ⅓ cup milk
– 1 tbsp vanilla extract
– 1 ½ cup whole wheat flour
– 1 tbsp baking powder
– 1 tbsp baking soda
– ½ tbsp ground nutmeg
– 2 0z walnut halves
– 4 0z zucchini grated
Instructions:
1. Preheat the oven to 350°F (175°C) and grease a loaf pan with coconut oil.
2. In a medium bowl, whisk together the eggs, melted coconut oil, honey, milk, and vanilla extract.
3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and ground nutmeg.

4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
5. Fold in the grated zucchini and walnut halves.
6. Pour the batter into the greased loaf pan and smooth the top.

7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
