Ingredients

–  1 medium carrot

–  ¼ medium red bell pepper

–  ¼ medium red onion

–  1 tbsp cottage cheese

–  1 tbsp greek yoghourt

–  1 tbsp dijon mustard

–  1 whole wheat tortilla wrap

–  1 0z spinach

–  1 tbsp pumpkin seeds

Instructions:

1. Peel and grate the carrot, chop the red bell pepper and red onion into small pieces.

2. In a bowl, mix together the cottage cheese, greek yoghurt, and dijon mustard.

3. Spread the cottage cheese mixture onto the whole wheat tortilla wrap.

4. Layer the grated carrot, chopped red bell pepper, red onion, spinach, and pumpkin seeds onto the wrap.

5. Roll up the wrap tightly, slice in half, and enjoy!
