Veggie Wrap

Ingredients
– 1 medium carrot
– ¼ medium red bell pepper
– ¼ medium red onion
– 1 tbsp cottage cheese
– 1 tbsp greek yoghurt
– 1 tbsp dijon mustard
– 1 whole wheat tortilla wrap
– 1 0z spinach
– 1 tbsp pumpkin seeds
Instructions:
1. Grate the carrot and thinly slice the red bell pepper and red onion.
2. In a small bowl, mix together the cottage cheese, Greek yogurt, and Dijon mustard.

3. Lay the whole wheat tortilla wrap on a clean surface and spread the cottage cheese mixture evenly over the wrap.
4. Layer the spinach leaves on top of the sauce, followed by the grated carrot, sliced red bell pepper, red onion, and pumpkin seeds.

5. Roll up the wrap tightly, cut in half, and serve.
