Veggie Cauliflower Fried Rice

Ingredients
– 1 tbsp olive oil
– ¼ medium red onion
– 1 Garlic
– Salt and Black Pepper
– ¼ tbsp cumin
– ¼ tbsp dried oregano
– 1 cup cauliflower, grated
– 1 tbsp tomato paste
– 2 0z boiled chicken
– 2 0z corn kernels
– 2 0z red beans
– ½ medium tomato
– ½ jalapeno
– 1 tbsp parsley
– ½ 0z shredded cheddar
Instructions:
1. Heat the olive oil in a large pan over medium heat.

2. Add the red onion, garlic, salt, black pepper, cumin, and dried oregano. Cook until the onion is translucent.
3. Add the grated cauliflower and tomato paste, stir to combine.
4. Add the boiled chicken, corn kernels, red beans, diced tomato, and jalapeno. Cook for another 5 minutes.

5. Stir in the parsley and shredded cheddar until melted.
6. Serve hot and enjoy!
