Ingredients

–  ¼ medium red pepper

–  ¼ medium yellow pepper

–  2 Radishes

–  2 Slices whole wheat toasted bread

–  2 tbsp goat cheese

–  1 leaf lettuce

–  1 0z Avocado

Instructions:

1. Start by washing and chopping the red pepper, yellow pepper, radishes, and avocado into thin slices.

2. Toast the whole wheat bread slices until golden brown.

3. Spread goat cheese on one side of the bread slices.

4. Layer the chopped vegetables on one side of the bread.

5. Top with a leaf of lettuce and the sliced avocado.

6. Top with the other bread slice, goat cheese side down.

7. Cut the sandwich in half and serve.
