Vegetable fried rice

Ingredients
– 1 tbsp extra virgin olive oil
– 1 clove garlic
– ¼ cup red bell pepper
– 4 0z crushed tomatoes
– ⅛ tbsp italian seasoning
– Salt and Black Pepper
– ⅛ tbsp coriander powder
– 1 tbsp lemon juice
– ¾ cup brown rice, cooked
– ¼ cup spring onion
– ¼ cup corn
Instructions:
1. Heat olive oil in a pan and sauté garlic until fragrant.

2. Add red bell pepper and cook until slightly softened.
3. Add crushed tomatoes, Italian seasoning, salt, black pepper, coriander powder, and lemon juice. Cook for a few minutes.

4. Stir in cooked brown rice, spring onion, and corn. Cook until heated through.
5. Serve hot and enjoy!
