Vegan Tofu Scramble recipe

Ingredients
– 7 0z extra firm tofu
– ½ tbsp olive oil
– 1 tbsp nutritional yeast
– ¼ cup soy milk
– ¼ tbsp turmeric
– ¼ tbsp paprika
– ¼ tbsp onion powder
– Salt and Black Pepper
– 1 tbsp dijon mustard
– 1 medium tomato
– 1 0z Avocado
– ½ tbsp chopped chives
Instructions:
1. Start by pressing the tofu to remove excess water. Once drained, crumble the tofu into a bowl.

2. In a separate bowl, mix together the olive oil, nutritional yeast, soy milk, turmeric, paprika, onion powder, salt, black pepper, and dijon mustard.
3. Pour the mixture over the crumbled tofu and mix well to combine.

4. Heat a skillet over medium heat and add the tofu mixture. Cook for 5-7 minutes, stirring regularly, until heated through and slightly browned.
5. Dice the tomato and avocado and sprinkle them over the tofu scramble. Top with chopped chives.
