Vegan rice

Ingredients
– ¼ cup brown rice
– Salt
– 1 tbsp olive oil
– ¼ medium red bell pepper
– 2 white mushrooms
– 1 medium carrot
– 2 tbsp chicken broth or water
– 4 0z diced tomatoes canned
– 1 tbsp tomato paste
– ¼ tbsp garlic powder
– ¼ tbsp paprika
– Salt and Fresh black pepper
– 1 tbsp parsley
Instructions:
1. Rinse the brown rice in a strainer under cold water.
2. In a medium saucepan, bring 1 cup of water to a boil. Add the brown rice and a pinch of salt. Reduce heat to low and cover. Cook for about 45 minutes, or until the rice is cooked through.

3. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced red bell pepper, mushrooms, and carrot. Cook for about 5 minutes, or until vegetables are slightly softened.
4. Add the chicken broth (or water), diced tomatoes, tomato paste, garlic powder, paprika, salt, and black pepper to the skillet. Stir to combine and let simmer for about 10 minutes.

5. Once the rice is cooked, add it to the skillet with the vegetable and tomato mixture. Stir to combine and let cook for an additional 5 minutes, or until everything is heated through.
6. Serve the vegan rice topped with fresh parsley.
