Vegan Fried rice

Ingredients
– 1 medium carrot
– ¼ cup brown rice
– 1 tbsp olive oil
– ¼ red bell pepper
– Salt and Pepper
– ⅛ tbsp chilli powder
– ⅛ tbsp cumin
– ⅛ tbsp dried oregano
– 2 tbsp tomato sauce
– 6 grape tomatoes
– 1 medium green onion
– 1 tbsp cilantro
Instructions:
1. Cook brown rice according to package instructions and set aside.
2. Cut the carrot and bell pepper into small pieces.

3. In a large pan, heat olive oil over medium heat.
4. Add the chopped carrot and bell pepper to the pan and sauté for 5-7 minutes until they are cooked through.
5. Season with salt, pepper, chili powder, cumin, and dried oregano.
6. Stir in the tomato sauce and grape tomatoes, cooking for another 2-3 minutes.
7. Add cooked brown rice to the pan and mix well with the vegetables.

8. Cook for an additional 5 minutes, stirring occasionally.
9. Garnish with chopped green onion and cilantro before serving.
