Ingredients

–  1 tbsp olive oil

–  1 garlic

–  ¼ medium yellow onion

–  1 medium carrot

–  ¼ medium red pepper

–  ¼ tbsp ground cumin

–  ¼ tbsp smoked paprika

–  ⅛ tbsp chilli powder

–  Salt and Black Pepper

–  ¼ tbsp dried oregano

–  5 0z diced tomatoes

–  ½ cup vegetable broth

–  ½ cup water

–  1 bay leaf

–  2 0z red beans, cooked

–  1 tbsp parsley

Instructions:

1. Heat olive oil in a large pot over medium heat. Add minced garlic, diced onions, carrots, and red pepper. Cook until the vegetables are softened.

2. Stir in ground cumin, smoked paprika, chilli powder, salt, black pepper, and dried oregano. Cook for another minute until the spices are fragrant.

3. Add diced tomatoes, vegetable broth, water, and bay leaf. Bring the mixture to a simmer and let it cook for about 20 minutes, stirring occasionally.

4. Stir in the cooked red beans and let the chili cook for another 10 minutes to let the flavors meld together.
