Introduction
Vedic Recipes. Ayurveda, the ancient Indian medical science, believes that everything in the world is composed of five elements – air, water, fire, earth, and space. These elements combine to form three doshas – Vata, Pitta, and Kapha – which govern our body’s response to different stimuli. When the balance between these doshas is disrupted, it can lead to illness.
The Ayurvedic Approach
In Ayurveda, it is believed that food plays a vital role in maintaining and restoring the balance of the doshas. While Ayurveda does not prohibit non-vegetarian food, it is generally recommended to follow a pure vegetarian diet for better health and well-being.
Ayurvedic Recipes
Ayurvedic recipes are designed to detoxify the body and promote overall wellness. These recipes primarily include herbs, vegetables, fruits, and plenty of water. It is said that Ayurvedic recipes were consumed by ancient Indian warriors, sages, and ascetics who lived for over a century.
Khichdi: A Traditional Ayurvedic Dish
Khichdi, also known as Turmeric Rice with Lentils, is a popular dish in Indian cuisine. It is not only light on the stomach but also highly nutritious. Here is a simple recipe to prepare Khichdi:

2 cups of white basmati rice
1 inch of ginger root, finely chopped
1 small cup of cilantro leaves, chopped
2 tbsp of ghee (clarified butter)
1/2 tbsp of turmeric
1/2 tbsp of coriander powder
1 tbsp of whole cumin seeds
1/2 tbsp of mustard seeds
1/2 tbsp of rock salt
1 pinch of asafoetida (hing)
5 to 7 cups of water
Method
Wash the moong dal and rice together until the water runs clear.
Heat a large saucepan over medium heat and add ghee.
Add mustard seeds, turmeric, asafoetida, whole cumin seeds, and coriander powder to the saucepan. Stir for a few minutes.
Add the washed rice and dal mixture to the saucepan and stir again.
Add water and bring it to a boil. Cook for 10 minutes.
Reduce the heat to low, cover the saucepan, and continue cooking until both the dal and rice become soft.
If desired, garnish with chopped cilantro leaves before serving.
