Tuna Zucchini patties

Ingredients
– ½ medium yellow onion
– 1 tbsp olive oil
– 7 0z Canned Tuna
– 1 small white Zucchini
– ½ cup whole wheat breadcrumbs
– 2 tbsp parsley
– 1 tbsp lemon juice
– 2 Eggs
– ½ cup whole wheat breadcrumbs
– 1 tbsp olive oil
Instructions:
1. Finely chop ½ medium yellow onion and grate 1 small white zucchini.

2. In a skillet, heat 1 tbsp of olive oil over medium heat and sauté the onion until translucent.
3. In a mixing bowl, combine the sautéed onion, grated zucchini, 7 oz canned tuna (drained), ½ cup whole wheat breadcrumbs, 2 tbsp chopped parsley, 1 tbsp lemon juice, and 2 beaten eggs. Mix well until all ingredients are combined.
4. Form the mixture into small patties and coat them with the remaining ½ cup of whole wheat breadcrumbs.

5. In the same skillet, heat 1 tbsp of olive oil over medium heat and cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
6. Serve the Tuna Zucchini patties hot with a side salad or your favorite dipping sauce.
