Ingredients

–  2 tbsp Red Onion

–  3 0z Tuna

–  1 0z Cottage cheese

–  1 tbsp low fat mayonnaise

–  1 tbsp pickles

–  1 tbsp parsley

–  1 tbsp dijon mustard

–  1 tbsp lemon juice

–  2 slices whole wheat bread toasted

–  4 slices tomato

–  Salt and Black Pepper

Instructions:

1. In a mixing bowl, combine the red onion, tuna, cottage cheese, mayonnaise, pickles, parsley, dijon mustard, lemon juice, salt, and black pepper. Mix well to combine all the ingredients.

2. Spread the tuna salad mixture onto one slice of toasted whole wheat bread.
