Tuna And Potato Salad

Ingredients
– 4 0z white potato
– Salt
– 2 lettuce leaves
– ½ medium cucumber
– 3 Radishes
– 1 medium scallion
– 4 0z Tuna
– 1 tbsp fat free yoghurt
– 1 tbsp light mayonnaise
– 1 tbsp white vinegar
Instructions:
1. Boil the white potato until cooked through, then let it cool and cut it into small cubes. Season with salt to taste.

2. Wash the lettuce leaves and tear into bite-sized pieces. Peel and slice the cucumber and radishes. Slice the scallion thinly.
3. In a mixing bowl, combine the tuna (drained), fat-free yogurt, light mayonnaise, and white vinegar. Mix well to combine.
4. Add the cooked potato, lettuce, cucumber, radishes, and scallion to the tuna mixture. Toss gently to combine all ingredients.

5. Serve the tuna and potato salad chilled and enjoy!
