Tuna and pasta salad

Ingredients

–  1 cup water

–  ¼ cup whole wheat macaroni

–  1 tbsp olive oil

–  ⅓ carrot

–  5 cherry tomatoes

–  ¼ cup kalamata olives

–  ½ can tuna in water

–  ½ tbsp parsley

–  1 tbsp olive oil

–  1 tbsp white vinegar

–  ¼ tbsp black pepper

–  ¼ tbsp salt

–  1 clove garlic

Instructions:

1. In a medium saucepan, bring the water to a boil. Add the whole wheat macaroni and cook according to package instructions until al dente. Drain and set aside to cool.

2. In a small skillet, heat 1 tbsp of olive oil over medium heat. Add the diced carrot and cherry tomatoes and sauté until slightly softened, about 5 minutes.

3. In a large bowl, mix together the cooked macaroni, sautéed vegetables, kalamata olives, tuna, and parsley.

4. In a small bowl, whisk together 1 tbsp of olive oil, white vinegar, black pepper, salt, and minced garlic. Pour over the salad and toss to combine.

5. Serve immediately or refrigerate for a few hours to allow the flavors to meld.
