Ingredients

–  2 cups water

–  ⅛ tbsp salt

–  1 0z whole wheat rotini pasta

–  ¼ cup red onion

–  4 cherry tomatoes

–  ⅓ cup Avocado

–  2 0z grilled chicken breast

–  ½ tbsp fresh parsley

–  2 tbsp lemon juice

–  ¼ tbsp mustard

–  Salt and Black Pepper

Instructions:

1. In a medium pot, bring 2 cups of water to a boil. Add 1/8 tbsp of salt and cook the whole wheat rotini pasta according to package instructions. Drain and set aside to cool.

2. Chop the red onion, cherry tomatoes, avocado, grilled chicken breast, and fresh parsley into small pieces.

3. In a small bowl, mix together the lemon juice, mustard, salt, and black pepper to make the dressing.

4. In a large bowl, combine the cooked rotini pasta, red onion, cherry tomatoes, avocado, grilled chicken breast, and fresh parsley.
