Ingredients

–  1 small stick of celery

–  ½ green onion

–  3 0z firm tofu

–  1 tbsp low fat mayonnaise

–  1 tbsp dijon mustard

–  Salt and Black Pepper

–  ¼ tbsp ground turmeric

–  Pinch of Cayenne pepper

–  2 slices whole wheat toast bread

–  1 leaf lettuce

Instructions:

1. Dice the celery and green onion finely.

2. Drain the tofu and crumble it into a bowl. Add in the diced celery and green onion.

3. In a small bowl, mix together the mayonnaise, dijon mustard, salt, black pepper, turmeric, and cayenne pepper. Pour this mixture over the tofu mixture and stir well to combine.

4. Toast the whole wheat bread slices.

5. Place a leaf of lettuce on one slice of toast, then top with the tofu salad mixture. Place the other slice of toast on top to make a sandwich.

6. Cut the sandwich in half and serve.
