Ingredients
– 2 eggs
– 1 cup romaine lettuce
– 1 cup spinach leaves
– ⅓ Avocado
– 5 cherry tomatoes
– ¼ cup canned chickpeas
– ½ tbsp green onion
– 1 tbsp feta cheese
– 1 tbsp walnuts
– ½ tbsp fresh parsley
– 1 tbsp extra virgin olive oil
– ½ tbsp lemon juice
– 1 clove garlic
– ¼ tbsp dijon mustard
– ¼ tbsp honey
– Salt and black pepper
Instructions:
1. Start by boiling the eggs until they are hard-boiled. Once cooled, peel and slice into halves.
2. In a large salad bowl, combine romaine lettuce and spinach leaves.

3. Add sliced avocado, cherry tomatoes, canned chickpeas, chopped green onions, feta cheese, walnuts, and fresh parsley.
4. In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, dijon mustard, honey, salt, and black pepper to make the dressing.

5. Drizzle the dressing over the salad and toss gently to combine.
6. Top the salad with the sliced boiled eggs.
