Egg Curry Grape Tomatoes

Ingredients
– ¼ medium yellow onion
– 5 0z mixed grape tomatoes
– 1 tbsp olive oil
– 1 garlic
– Salt and black pepper
– ¼ tbsp ground coriander
– ¼ tbsp turmeric powder
– ¼ tbsp cumin powder
– ¼ tbsp garam masala
– A pinch of cayenne powder
– 2 egg (hardboiled and cooled)
– ⅓ cup brown rice cooked
– Parsley
Instructions:
1. Heat olive oil in a pan over medium heat. Add chopped onions and cook until they are translucent.
2. Add the grape tomatoes and cook for about 5 minutes until they start to soften.

3. Add minced garlic, salt, black pepper, ground coriander, turmeric powder, cumin powder, garam masala, and cayenne powder. Stir well to combine all the spices.
4. Peel the hardboiled eggs and chop them into quarters. Add the eggs to the pan and gently mix them with the tomato mixture.

5. Cook for another 5 minutes, stirring occasionally, until the flavors are well combined and the eggs are heated through.
6. Serve the egg curry grape tomatoes over cooked brown rice and garnish with chopped parsley.
