Ingredients
– ¼ medium yellow onion
– ¼ medium red bell pepper
– 1 garlic
– 1 tbsp olive oil
– Salt and black pepper
– ¼ tbsp cumin powder
– ¼ tbsp paprika
– 5 0z crushed tomatoes
– 2 eggs
– Parsley
– 2 slices whole wheat bread toasted
Instructions:
1. Finely dice the onion, red bell pepper, and garlic.
2. Heat olive oil in a skillet over medium heat.

3. Add the diced onion, red bell pepper, and garlic to the skillet and sauté until softened.
4. Season with salt, black pepper, cumin powder, and paprika.
5. Add the crushed tomatoes to the skillet and simmer for 5 minutes.
6. Using a spoon, make two wells in the tomato mixture and crack an egg into each well.

7. Cover the skillet and cook until the eggs are set to your liking.
8. Garnish with chopped parsley and serve with toasted whole wheat bread.
