Easy egg Salad
Easy egg salad is a quick and convenient dish that can be prepared in minutes. With just a few simple ingredients like boiled eggs, mayonnaise, mustard, and seasonings, you can have a delicious and satisfying meal or snack. Not only is it easy to make, but it is also packed with protein and nutrients from the eggs.

Ingredients
– 2 eggs (Hardboiled and cooled)
– 1 tbsp red onion
– 1 tbsp greek yoghurt
– ½ tbsp dijon mustard
– Salt and black pepper
– 2 slices whole wheat bread toasted
– Spinach leaves
Instructions:
1. To make the Easy egg salad, start by peeling and chopping the hardboiled eggs into small pieces.
2. In a mixing bowl, combine the chopped eggs with diced red onion, greek yogurt, dijon mustard, and season with salt and black pepper to taste. Mix well.

3. Place a few spinach leaves on one of the toasted whole wheat bread slices.
4. Top the spinach leaves with the egg salad mixture.

5. Place the second slice of toasted bread on top to create a sandwich.
6. Cut the sandwich in half and serve.
