Ditalini Pasta Soup

Ingredients
– 1 tbsp olive oil
– 4 0z ground lean beef
– ¼ medium red onion
– ½ medium carrot
– 1 garlic
– ½ cup chicken broth
– ½ cup water
– 3 0z tomato sauce
– 3 0z diced tomatoes
– ¼ tbsp dried oregano
– ¼ tbsp dried thyme
– ¼ tbsp dried basil
– Salt and Black pepper
– 1 0z red beans
– 2 0z ditalini pasta cooked
– 1 tbsp parsley
– 1 tbsp parmesan cheese
Instructions:
1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned.

2. Add chopped red onion, carrot, and minced garlic to the pot. Cook until vegetables are softened.
3. Pour in chicken broth, water, tomato sauce, diced tomatoes, oregano, thyme, basil, salt, and black pepper. Bring to a simmer.

4. Add in red beans and cooked ditalini pasta. Let the soup simmer for an additional 10 minutes.
5. Stir in chopped parsley and grated parmesan cheese before serving.
