Ingredients

–  1 0z Apple Sauce

–  1 tbsp instant coffee mixed with 1 tbsp hot water

–  ½ cup almond milk

–  ½ tbsp vanilla extract

–  1 tbsp apple cider vinegar

–  2 0z coconut sugar

–  1 cup old fashioned oats

–  ½ tbsp baking powder

–  2 0z chopped walnut

Instructions:

1. Preheat the oven to 350°F and line a muffin tin with paper liners.

2. In a mixing bowl, combine the apple sauce, instant coffee mixture, almond milk, vanilla extract, and apple cider vinegar. Mix well.

3. Add in the coconut sugar and mix until well combined.

4. Stir in the old fashioned oats, baking powder, and chopped walnuts. Mix until just combined.

5. Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.

6. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the muffins comes out clean.

7. Remove from the oven and let cool before serving.
