Ingredients
– Salt
– ¼ cup lentils
– 5 0z cod fish fillet
– 1 tbsp olive oil

– 3 0z diced tomatoes
– ¼ tbsp dried thyme
– Salt and black pepper
– ½ tbsp parsley
Instructions:
1. In a small pot, bring 1 cup of water to a boil. Add the lentils and a pinch of salt. Reduce heat to low and simmer for 15-20 minutes, or until lentils are tender. Drain any excess water and set aside.
2. Season cod fillet with a pinch of salt and black pepper.

3. In a large non-stick pan, heat olive oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook for 5-7 minutes, or until vegetables are softened.
4. Push the vegetables to the side of the pan and add the cod fillet, cooking for 3-4 minutes on each side, or until cooked through.
5. Add diced tomatoes, thyme, salt, and pepper to the pan, stirring to combine.

6. Stir in the cooked lentils and cook for an additional 2-3 minutes, allowing flavors to meld together.
7. Garnish with parsley before serving.
