Ingredients

–  1 large egg

–  ½ cup low fat milk

–  1 tbsp peanut butter

–  2 tbsp maple syrup

–  ½ cup oat flour

–  ¼ cup almonds chopped

–  ¼ cup walnut chopped

–  ¼ cup raisins

–  1 tbsp ground flaxseed

–  ¼ tbsp baking powder

–  ¼ tbsp cinnamon

Instructions:

1. Preheat the oven to 350°F and line a muffin tin with paper liners.

2. In a mixing bowl, beat the egg. Then add in the milk, peanut butter, and maple syrup. Mix well.

3. Add in the oat flour, chopped almonds, chopped walnuts, raisins, ground flaxseed, baking powder, and cinnamon. Mix until well combined.

4. Spoon the batter into the muffin tin, filling each cup about 3/4 full.

5. Bake for 20-25 minutes until the muffins are golden brown and a toothpick inserted into the center comes out clean.

6. Let the muffins cool before serving.
