Ingredients

–  ½ cup whole wheat flour

–  ¼ cup cocoa powder

–  1 0z mini chocolate chips

–  ½ tbsp baking powder

–  Salt

–  1 egg white

–  1 tbsp honey

–  1 tbsp applesauce

–  1 0z greek yoghurt

–  1 tbsp vanilla extract

–  1 tbsp coconut sugar

–  ½ cup grated zucchini

Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a mixing bowl, combine the whole wheat flour, cocoa powder, mini chocolate chips, baking powder, and a pinch of salt.

3. In a separate bowl, whisk together the egg white, honey, applesauce, Greek yogurt, vanilla extract, and coconut sugar until well combined.

4. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Fold in the grated zucchini.

5. Divide the batter evenly among the muffin cups and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
