Chocolate zucchini bread

Ingredients
– 1 cup all purpose flour
– ½ tbsp ground cinnamon
– ½ tbsp baking soda
– Salt
– 2 eggs
– 2 0z coconut sugar
– 2 tbsp melted coconut oil
– 1 tbsp vanilla extract
– 2 small zucchini
– 2 0z mini chocolate chips
Instructions:
1. Preheat the oven to 350°F and grease a loaf pan.
2. In a bowl, mix together the flour, cinnamon, baking soda, and a pinch of salt.

3. In another bowl, beat the eggs and coconut sugar until smooth. Add in the melted coconut oil and vanilla extract.
4. Grate the zucchini and squeeze out any excess moisture. Add the grated zucchini to the wet ingredients.
5. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.

6. Pour the batter into the greased loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the bread to cool before slicing and serving.
