Ingredients

–  2 tbsp ground flax seed

–  6 tbsp water

–  1 0z coconut sugar

–  3 tbsp almond butter

–  ½ tbsp vanilla extract

–  2 tbsp cacao powder

–  ¼ tbsp baking soda

–  Salt

–  ½ cup chopped almonds

Instructions:

1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

2. In a small bowl, mix together ground flax seed and water to make a flax egg. Let it sit for 5 minutes until it thickens.

3. In a large mixing bowl, combine coconut sugar, almond butter, vanilla extract, cacao powder, baking soda, and a pinch of salt. Mix well until smooth.

4. Add the flax egg to the mixture and stir until well combined.

5. Fold in chopped almonds until evenly distributed throughout the dough.

6. Using a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them a few inches apart.

7. Flatten the dough slightly with the back of a spoon or your fingers.

8. Bake for 10-12 minutes, or until the edges are set and slightly golden.

9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
