Ingredients
– 5 0z Chickpeas
– Salt
– 1 tbsp Parsley
– 5 Red Grape tomatoes
– 1 tbsp yellow onion
– Salt and Black Pepper
– 1 tbsp Olive oil
– 2 Eggs (hard boiled and cooled)
Instructions:
1. Rinse and drain the chickpeas, then place them in a large mixing bowl.

2. Add a pinch of salt and the chopped parsley to the chickpeas and mix well.
3. Cut the grape tomatoes in half and dice the yellow onion. Add them to the chickpea bowl.

4. Season with salt and black pepper to taste, then drizzle with olive oil and mix everything together.
5. Peel and slice the hard-boiled eggs and place them on top of the salad.
