Chickpea Salad

Ingredients
– 2 0z spinach
– 3 Basil leaves
– 1 Garlic
– 1 tbsp vegan parmesan cheese
– 1 tbsp olive oil
– 2 tbsp water
– 2 tbsp lemon juice
– ¾ cup chickpeas, canned or cooked
– 5 grape tomatoes
– ¼ medium red onion
– 5 kalamata olives
– Salt and black pepper
Instructions:
1. In a large bowl, mix together spinach, torn basil leaves, minced garlic, vegan parmesan cheese, olive oil, water, and lemon juice.

2. Add in chickpeas, grape tomatoes (halved), thinly sliced red onion, and chopped kalamata olives. Mix well to combine.

3. Season with salt and black pepper to taste.
4. Serve chilled or at room temperature.
