Chickpea And Vegetables Recipe 2

Ingredients
– 1 tbsp olive oil
– 1 garlic
– ½ medium carrot
– ¼ medium yellow onion
– ¼ medium red pepper
– ½ cup chickpeas, boiled
– ¼ tbsp turmeric
– 1 tbsp nutritional yeast
– A pinch of chilli powder
– Salt and Black Pepper
– 2 0z spinach
Instructions:
1. Heat olive oil in a skillet over medium heat.

2. Add minced garlic and sauté for 1 minute.
3. Add diced carrot, onion, and red pepper. Cook for 5-7 minutes until vegetables are tender.
4. Add boiled chickpeas, turmeric, nutritional yeast, chilli powder, salt, and black pepper. Stir well to combine.

5. Add spinach and cook until wilted, about 2-3 minutes.
6. Serve hot and enjoy!
