Chickpea And Tomato Quinoa

Ingredients
– ¼ cup quinoa
– 1 tbsp olive oil
– 1 clove garlic
– ¼ white onion
– 1 medium tomato
– 1 tbsp tomato paste
– ⅛ tbsp paprika
– ⅛ tbsp cayenne pepper
– Salt and pepper
– 1 0z spinach
– 2 0z cooked chickpeas
– 1 tbsp black olives
– 1 tbsp parsley
Instructions:
1. Rinse the quinoa in a fine mesh strainer under cold water. In a small saucepan, combine quinoa with ½ cup of water and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes.

2. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, sauté until fragrant. Add diced tomato, tomato paste, paprika, cayenne pepper, salt, and pepper. Cook for 5-7 minutes until the tomato starts to break down.
3. Add the cooked quinoa, chickpeas, black olives, and spinach to the skillet. Stir well to combine all the ingredients. Cook for an additional 5 minutes, until the spinach wilts.

4. Remove from heat and garnish with chopped parsley before serving.
