Chicken With Quinoa And Peppers
Chicken with quinoa and peppers is a nutritious and delicious meal that provides a balanced combination of protein, carbohydrates, and fiber. Ingredients
– ¼ tbsp chilli powder
– ¼ tbsp cayenne pepper
– ¼ tbsp cumin powder
– Salt and black pepper
– 4 0z chicken breast
– 1 minced garlic
– 1 tbsp lime juice
– 1 tbsp olive oil
– ¼ medium red onion
– ½ medium red bell pepper
– ½ medium yellow bell pepper
– ½ medium green bell pepper
– ½ cup quinoa cooked
– 1 tbsp parsley
Instructions:
1. In a small bowl, mix together chilli powder, cayenne pepper, cumin powder, salt, and black pepper. Rub this mixture onto the chicken breast and let it marinate for 30 minutes.
2. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant.

3. Add the marinated chicken breast to the skillet and cook for 5-7 minutes on each side, or until the chicken is cooked through. Remove the chicken from the skillet and let it rest.
4. In the same skillet, add chopped red onion, red bell pepper, yellow bell pepper, and green bell pepper. Cook for 5-7 minutes, or until the vegetables are tender.

5. Add cooked quinoa to the skillet and mix well with the vegetables. Season with salt and pepper to taste.
6. Slice the cooked chicken breast and serve it on top of the quinoa and pepper mixture. Drizzle with lime juice and garnish with parsley before serving.
