Chicken Vegetable Soup

Ingredients

–  1 tbsp olive oil

–  1 garlic

–  ¼ medium red onion

–  ½ medium yellow bell pepper

–  2 skinless, boneless chicken thighs

–  Salt and black pepper

–  5 0z white potatoes

–  4 0z canned diced tomatoes

–  ½ cup low sodium chicken broth

–  ½ cup water

–  1 Bay leaf

Instructions:

1. Heat olive oil in a large pot over medium heat. 

2. Add minced garlic, chopped red onion, and diced yellow bell pepper. Cook until onion is translucent.

3. Add diced chicken thighs and season with salt and black pepper. Cook until chicken is browned on all sides. 

4. Add diced white potatoes, canned diced tomatoes, chicken broth, water, and bay leaf.

5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until potatoes are cooked through. 

6. Taste and adjust seasoning if necessary. 

7. Serve hot and enjoy!
