Chicken Salad With Lettuce And Tomato

Ingredients
– 2 cups water
– 3 0z chicken breast
– 1 bay leaf
– 1 slice lime
– ⅛ tbsp salt
– 1 cup romaine lettuce
– ¼ red onion
– 5 cherry tomatoes
– ¼ avocado
– 1 0z crumbled feta
– 1 tbsp lemon juice
– 1 tbsp olive oil
– ½ tbsp lime zest
– ⅛ tbsp black pepper
– ⅛ tbsp salt
Instructions:
1. In a medium pot, bring water to a boil. Add chicken breast, bay leaf, lime slice, and salt. Reduce heat and simmer for 15-20 minutes until chicken is cooked through. Remove chicken from pot and let it cool before shredding with a fork.

2. In a large mixing bowl, combine shredded chicken, romaine lettuce, diced red onion, halved cherry tomatoes, diced avocado, and crumbled feta cheese.
3. In a small bowl, whisk together lemon juice, olive oil, lime zest, black pepper, and salt. Pour over the salad and toss to combine.

4. Serve the chicken salad with lettuce and tomato chilled and enjoy!
