Ingredients

–  Water

–  Salt

–  1 bay leaf

–  4 0z chicken breast

–  ¼ medium yellow onion

–  ½ cup corn

–  1 tbsp parsley

–  Salt and Black Pepper

–  2 tbsp lemon juice

–  2 0z avocado

Instructions:

1. In a pot, bring water to a boil with a pinch of salt and the bay leaf. Add the chicken breast and simmer for 10-15 minutes until cooked through. Remove the chicken from the pot and let it cool before shredding it into bite-sized pieces.
