Ingredients

–  2 0z shredded chicken breast

–  1 tbsp pesto

–  1 tbsp greek yoghourt

–  Salt and black pepper

–  2 slices whole wheat toast

–  2 slices medium tomato

–  1 0z Arugula

Instructions:

1. In a small bowl, mix together the shredded chicken breast, pesto, greek yogurt, salt, and black pepper.

2. Toast the whole wheat bread slices until golden brown.

3. Spread the chicken pesto mixture on one slice of toast.

4. Top with the tomato slices and arugula.
