Chicken Meatballs With Cauliflower

Ingredients
– 1 cup riced cauliflower
– 5 0z ground chicken
– 1 0z grated low fat mozzarella
– ¼ crumbled bouillon cube
– 1 garlic
– ¼ tbsp italian seasoning
– Salt and Black Pepper
– 1 tbsp parsley
– 1 tbsp olive oil
– ¼ cup low sodium chicken stock
– 2 tbsp lemon juice
– 1 tbsp sriracha
– ¼ tbsp garlic powder
Instructions:
1. Preheat oven to 400°F (200°C).

2. In a large bowl, combine riced cauliflower, ground chicken, grated mozzarella, crumbled bouillon cube, minced garlic, Italian seasoning, salt, black pepper, and parsley. Mix well.
3. Shape the mixture into small meatballs and place them on a baking sheet lined with parchment paper.
4. In a small bowl, whisk together olive oil, chicken stock, lemon juice, sriracha, and garlic powder. Pour this mixture over the meatballs.

5. Bake for 20-25 minutes, or until the meatballs are cooked through.
6. Serve hot and enjoy!
