Chicken Curry
Chicken curry is a flavorful and versatile dish that is loved by many for its rich and aromatic taste. Not only is it delicious, but it also provides a range of health benefits. Ingredients
– ¼ medium yellow onion
– 1 tbsp olive oil
– 5 0z chicken breast
– 1 garlic
– ¼ tbsp ground cumin
– ¼ tbsp ground coriander
– ¼ tbsp paprika
– ¼ tbsp ground turmeric
– Salt and Black Pepper
– ½ cup low sodium chicken broth
– 2 0z crushed tomatoes
– 1 tbsp heavy cream
– 1 cup brown rice cooked
– Cilantro
Instructions:
1. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes.

2. Add chopped chicken breast to the skillet and cook until browned, about 8-10 minutes.
3. Add minced garlic, ground cumin, ground coriander, paprika, ground turmeric, salt, and black pepper to the skillet. Stir to combine and cook for 1-2 minutes.
4. Pour in low sodium chicken broth and crushed tomatoes. Stir well and let simmer for 15-20 minutes.

5. Add heavy cream to the skillet and stir until well combined. Let simmer for an additional 5 minutes.
6. Serve the chicken curry over a bed of cooked brown rice and garnish with chopped cilantro.
