Chicken and Veggie Stir Fry

Ingredients

–  1.5 0z low sodium vegetable broth

–  ½ tbsp low sodium soy sauce

–  ½ tbsp honey

–  ¼ tbsp ginger, grated

–  ¼ tbsp garlic powder

–  1 tbsp olive oil

–  5 0z chicken breast

–  Black pepper

–  ¼ medium yellow onion

–  5 0z broccoli florets

–  3 mushrooms

Instructions:

1. In a small bowl, mix together the vegetable broth, soy sauce, honey, ginger, and garlic powder. Set aside.

2. Heat the olive oil in a large skillet over medium heat.

3. Season the chicken breast with black pepper and add it to the skillet. Cook until browned on both sides, about 5 minutes per side.

4. Remove the chicken from the skillet and set aside.

5. In the same skillet, add the onion, broccoli, and mushrooms. Cook until the vegetables are tender, about 5-7 minutes.

6. Slice the cooked chicken into strips and add it back to the skillet.

7. Pour the broth mixture over the chicken and vegetables. Cook for another 2-3 minutes, until everything is heated through.

8. Serve hot and enjoy!
