Chicken And Chickpea Stir-fry

Ingredients
– 1 tbsp extra virgin olive oil

– 3 0z chicken breast
– ½ cup tomatoes
– ⅓ cup canned chickpeas
– 1 tbsp lemon juice
– 2 tbsp black olives
– ⅛ tbsp paprika
– ⅛ tbsp ground cumin
– Salt and black pepper
– 1 tbsp parsley
Instructions:
1. Heat olive oil in a skillet over medium heat.
2. Add minced garlic and diced red onion, sauté until fragrant.

3. Add cubed chicken breast and cook until browned.
4. Stir in chopped tomatoes, canned chickpeas, lemon juice, black olives, paprika, cumin, salt, and black pepper.

5. Cook for 5-7 minutes or until chicken is cooked through and flavors are well combined.
6. Serve hot, garnished with chopped parsley.
