Ingredients
– 6 0z riced cauliflower
– 1 tbsp olive oil
– 1 egg
– 1 garlic
– ½ medium yellow onion
– ½ medium carrot
– 2 0z broccoli florets
– 1 0z corn
– 1 0z peas
– 2 tbsp soy sauce
Instructions:
1. Heat 1 tbsp of olive oil in a pan over medium heat.

2. Add minced garlic, diced onion, and shredded carrot to the pan and sauté until softened.
3. Add riced cauliflower, broccoli florets, corn, and peas to the pan and cook for 5-7 minutes until vegetables are tender.
4. Make a well in the center of the pan and crack an egg into it. Scramble the egg and mix it with the vegetables.

5. Pour soy sauce over the mixture and stir to combine. Cook for an additional 2-3 minutes.
6. Serve hot and enjoy your delicious cauliflower rice!
