Cauliflower Pizza

Ingredients
– 1 head cauliflower
– 1 egg
– Salt and black pepper
– ⅛ tbsp italian seasoning
– ¼ cup mozzarella cheese
– ¼ yellow bell pepper
– ¼ small red onion
– 4 cherry tomatoes
– 3 tbsp tomato sauce
– ½ tbsp mozzarella cheese
– ¼ green bell pepper
Instructions:
1. Preheat the oven to 450°F.
2. Break the cauliflower into florets and pulse in a food processor until it resembles rice.

3. Microwave the cauliflower rice for 4-5 minutes, then squeeze out excess moisture with a clean dish towel.
4. In a bowl, combine the cauliflower rice, egg, salt, pepper, Italian seasoning, and ¼ cup of mozzarella cheese. Mix well.
5. Spread the mixture onto a baking sheet lined with parchment paper and shape into a crust.
6.Bake the crust for 15-20 minutes, until lightly golden.

7. Remove from the oven and top with tomato sauce, remaining mozzarella cheese, yellow bell pepper, red onion, cherry tomatoes, and green bell pepper.
8. Bake for another 10-15 minutes, until the cheese is melted and bubbly.
9. Slice and serve hot.
